Meringue "Air" Cookies

MY favorite cookie, when I was little, and a favorite of Beth's too. Do NOT freeze or ship these though. I always called them "Air Cookies"

Ingredients

  • 3

    egg whites

  • 1/2

    t. salt

  • 1

    tsp. vanilla

  • 3/4

    c. sugar

  • 1-2

    c. chocolate chips (I like mini)

  • 1/2-1

    c. finely chopped nuts (opt.)

  • 1/4

    c. coconut

  • For Christmas, I like these tinted with RED FOOD COLORING and I add 1/4 tsp. peppermint extract and some crushed candy canes

Directions

Beat egg whites, salt & vanilla until stiff. Gradually add sugar and beat to stiff peaks. Fold in all the other goodies. Drop by spoonfuls onto brown paper bag (parchment works best) lined cookie sheet. Do NOT grease. Bake at 300 for 25 min. Let cool 10 min. before removing from paper.
