This is GREAT's recipe, and it's FAST and EASY! Maybe the only fast recipe she had:)

  • 1 Tb. butter, softened

  • 1 c. flour

  • Crust:
  • 1 cup flour
  • 1/4 cup powdered sugar
  • 1/2 cup (1 stick) unsalted REAL butter, chilled (cut in pieces)
  • Top layer:
  • 2 eggs
  • 3/4 – 1 cup granulated sugar
  • 3 TB lemon juice
  • 3/4 tsp grated lemon rind (optional)
  • 2 TB flour
  • 1/2 tsp baking powder
  • powdered sugar (to dust on top of cooled bars)
