Lemon Melting Moments

An unbelievably YUMMY parfait-type dessert - very light and perfect for a summer brunch. I've brought these to pot-lucks in little plastic cups too ... can decorate with strawberry or raspberries

Ingredients

• 1 pt. (2 c) heavy whipping cream
• 1/2 c. SUPERFINE white sugar
• juice of 4 lemons
• grated zest of 2-4 lemons
• 2 Tb. CONDENSED (Eagle Brand) milk
• Berries for garnish

Step 1

Combine all ingredients (except berries) in large, well-chilled mixing bowl and beat until very thick. Divide among parfait glass and chill until ready to serve. Garnish with a berry...
