Italian Sausage Lentil Soup

I make this soup several times a month for dinner in the winter ~ just add crusty bread and a green salad
- 2 TB butter
- 1 chopped onion
- 1 clove garlic, minced
- 2 stalks celery, chopped
- 2 large tomatoes, chopped
- 1 tsp oregano
- 2 small zucchini, sliced
- 1/2 cup red wine
- 6 oz. cooked lentils or 1 envelope lentil soup mix
- 1 beef bouillon cube
- 3 cups water
- salt and pepper to taste
- up to 1 lb. sweet Italian sausage, cut into 1” pieces
- grated Parmesan cheese (optional)
- 1 fresh sprig rosemary (optional)
Creamy Chili Potato Casserole

What a GREAT side dish this is! Something a little different to make too
- 6 c. frozen hash brown potatoes (thawed)
- 1 can condensed cream of chicken soup
- 1 c. sour cream
- 2-4 Tb. diced chilis (mild, probably)
- 1/4 c. chopped parsley (or cilantro)
- 1 small can sliced black olives, drained
- 1-1/2 c. grated sharp Cheddar cheese
- 2 Tb. grated Parmesan cheese
Oreo Truffles

A new recipe for me ~ but I've made it several times already
- 1 16-oz package Oreo sandwich cookies
- 1 8-oz. cream cheese, softened
- 8 oz. semi-sweet chocolate melted (or 8 oz. white chocolate chips melted) ~ OR ~ can use almond or white chocolate bark

- Frosting:
- 2 cups flour
- 2 tsp baking powder
- 1-1/2 tsp baking soda
- 1 tsp salt
- 1 TB cinnamon
- 2 cups sugar
- 1-1/2 cups cooking oil
- 4 eggs
- 2 + cups grated carrots (use food processor)
- 1 (8oz) can crushed pineapple, drained
- 1/2 cups chopped nuts (optional)
- 1 cup butter, softened
- 2 (8 oz each) packages cream cheese, softened
- 2 tsp pure vanilla
- 2 lbs powdered sugar
- (This is a doubled frosting recipe, since I like LOTS of frosting)

- 2 slices bread, soaked in milk and wrung out
- 2 TB melted butter
- 1/2 cup minced onion
- 2 TB capers
- 2 tsp salt
- 1/4 tsp pepper
- 2 tsp Worcestershire sauce
- 4 TB butter
- 1-1/2 cup sour cream
- 1/4 cup heavy cream
- 2-4 tsp dill weed (I like lots)
- 1/2 tsp salt
- cooked rice or wide noodles
Chinese Chicken Salad

A perfect Summer dinner, or lunch
- 3-4 chicken breast halves, boned & skinned
- 1 head iceburg lettuce, shredded
- 1 bunch green onions (cut the green sections in pieces, julienne the whites)
- 1/2 c. chopped cilantro
- 1 small can mandarin oranges, drained
- 2-4 Tb. sesame seeds, toasted
- 1 pkg. maifun (Chinese rice noodles)
- oil to cook the noodles
- dash powdered ginger
- a good vignarette dressing w/ginger

- Sauce:
- 6 lamb chops
- 1/2 tsp. salt
- 1/4 tsp. pepper
- flour
- olive oil
- 1 tsp. Worchestershire sauce
- 1/2 c. sliced mushrooms
- 1/2 c. white wine
- 1/4 c. catsup

- 3 eggs
- 1 c. sugar
- 2/3 c. pumpkin puree
- 1 tsp. lemon juice
- 3/4 c. flour

- 2 tsp. cinnamon

- 1/2 tsp. EACH salt and nutmeg
