Oreo Balls

Crush Oreos in food processor
- 1 pkgs. oreos
- 1 - 8 oz. pkg. cream cheese, softened
- White Chocolate Melted 1 & 1/2 lbs)with
- 1/2 cube wax
Corn and Black Bean Dish

Mix all together and serve cool
- 2 cans of Mexican style corn drained
- 2 cans of black beans, drained, and rinsed
- 1 can of diced tomatoes ( I use the one wiht the sweet onions)
- 1/2 c. of low fat italian dressing
- 1/4 c. balsamic vinegar
- 1 t. Splenda
- The flavors are really good with Dried Tomatoe and Pesto Chicken
Broccoli Salad

Mix mayo, sugar and vinegar and refrigerate for a few hours
- 1 Bunch of Broccoli
- 1 Cup raisins
- 1/2 cup peacans, chopped
- 12 slices bacon, cooked, drained and crumbled
- 1 cup of mayonaise
- 1/2 cup of sugar
- 1 T. apple cider vinegar
Basil Tomato Soup

Saute onions in 2 T. olive oil until tender
- 2 medium onions, chopped
- 4 T. olive oil, divided
- 3 - 35 oz. cans Italian style whole peeled tomatoes with basil
- 1 - 32 oz. can chicken broth
- 1 cup loosely packed fresh basil leaves
- 3 cloves garlic
- 1 t. lemon zest
- 1 T. lemon juice
- 1 t. salt
- 1 t. sugar
- 1/4 t. pepper
- 1 - 16 oz. package frozen breaded cut okra
Blueberry Muffins (Mom)

Mix the milk, egg and oil together
- 1/2 cup milk
- 1/4 cup vegetable oil
- 1 egg
- 1 & 1/2 cup self rising flour
- 1/2 cup sugar
- 1 teaspoon vanilla
- 1 cup fresh blueberries
Overnight Homemade Salsa

Layer ingredients (except for lime juice) in bowl
- 2-3 ripe fresh tomatoes, chopped
- 1/2 cup fresh chopped cilantro
- 1-2 cloves of garlic, chopped
- juice of 1/2 lime
- 1/2 cup chopped sweet vidalia onion
- 1/2 cup black beans, rinsed and drained
- 1/2 cup shoepeg corn, drained
- 1 small jalapeno pepper, chopped fine
- ground cumin- amount to taste
- salt and pepper to taste
Hot Chicken Casserole

Mix all ingredients in a large bowl
- 2 cup cooked chicken
- 1 pkg. Mahatma Sesame rice (cooked in chicken juice)
- 1 cup celery
- 1/2 cup onion
- 1 can cream of chicken soup
- 3/4 cup mayo
- 1 - 4 oz. jar pimineto
- 1 - 4 oz. jar mushrooms
- Pepperidge Farm Herb seasoned stuffing and butter
Bobby Shelton Chocolate Icing

May need to add a little milk to make icing thinner! Cake Mix, Duncan Hines Golden Butter, may need to add another...
- 8 oz. cream cheese, soft
- 1 box - 10x powdered sugar (4 cups)
- 1 stick margarine
- Melt the butter and cream cheese together. Then, add the sugar.
- 3 T. cocoa (use 2 if you want it lighter)
- 3-5 T. Nestle Quick
- 2 t. vanilla
Garlic Shrimp (Williams-Sonoma)

Peel and devein shrimp, leaving tail intact
- 4-6 fresh garlic cloves, chopped fine
- 1 lb. large shrimp
- 1/3 c. olive oil
- 1/4 c. tomato sauce
- 2 T. red wine vinegar
- 2 T. chopped fresh basil
- 1/2 t. salt
- 1/2 t. cayenne pepper
Shrimp Chowder

Melt butter in a Dutch oven over medium heat; add onion and sauté until tender
- 2 T. Butter
- 1 medium onion, chopped
- 2 (10 3/4 oz.) cans cream of potato soup, undiluted
- 3 1/2 cups milk
- 1/4 t. Ground red pepper
- 1 & 1/2 pounds fresh peeled shrimp
- 4 oz. shredded Monterey Jack cheese
