Ingredients
- CAKE:
- 2 cups grated carrots
- 1 cup walnuts
- 3 cups flour
- 2 tsp. cinnamon
- 2 tsp. baking powder
- 4 eggs
- 2 cups sugar
- 1 1/2 cups oil
- FROSTING:
- 3 oz. cream cheese
- 1 tsp. vanilla extract
- 1/4 cup butter
- 2 cups powdered sugar

Preparation
Step 1
Preheat oven to 350
CAKE:
Beat eggs.
Add sugar and oil. Mix well.
Add flour cinnamon and baking powder.
Mix well.
Add carrots and walnuts.
Mix well.
Pour into 2 9 inch round pans or 1 bundt pan.
Bake 40 to 50 minutes in cake pans.
Bake 1 hour for bundt pan.
Check with toothpick for doneness.
Cool completely.
FROSTING:
In mixer bowl, beat together cream cheese, butter and vanilla extract until light and fluffy.
Gradually add powdered sugar, beating until smooth.
Sprea on cooled cake.
Sprinkle with crushed walnuts if desired.
