- 8-12 canned whole green chilies, drained
- 8 oz, shelled, cooked shrimp; finely chopped
- 4 scallions, chopped
- 3 jalapeno chilies, seeded and chopped
- 1/2 c grated monterey cheese
- grated peel of lemon
- salt and pepper to taste
- 3-4 T Hellman's mayo
Preparation time 20mins
Cooking time 30mins
Pat chilies dry with paper towels and slit down one side.
Mix shrimp, scallions, chilies, cheese, and lemon. Season to taste. Add mayo and mix well. Stuff chilies with shrimp mixture. Broil until heated through - about 8-10 mins.
