New Potato Salad and Pea Salad

Ingredients

  • 2 pounds red potatoes, sliced 1/2" thick
  • 1 cup frozen peas thawed
  • 1 cup radishes, sliced
  • 1/2 cup mayonnaise
  • 2 T sugar
  • 1/2 cup buttermilk
  • 1 T Dijon mustard
  • 1 T fresh dill, chopped
  • Salt and pepper to taste

Preparation

Step 1

Boil potatoes in a pot of salted water until tender, 10-15 minutes.
Drain well and let them cool to room temperature. Gently combine potatoes, peas and radishes.
Whisk mayo, buttermilk, sugar, mustard and dill together.
Drizzle potatoes with dressing and toss gently to coat, taking care not to break up potatoes too much.
Season with salt and pepper.
