Pork/Glazed Pork Chops with Cinnamon

Ingredients
- 2 tbsp vegetable oil
- three 2 1/2 " long cinnamon sticks
- 2 bay leaves
- Eight 5-6 oz pork chops thinly cut
- Salt and freshly ground pepper
- 2 medium carrots, sliced crosswise 1/4 " thick
- 1 medium onion, coarsely chopped
- 1 medium celery rib, finely chopped
- 1 cup water
- 1/2 cuptamari
- 3 tbsp sugar
- 1/8 tsp cayenne pepper
- Basmati rice for serving

Step 1
In a large skillet, heat the oil. Add the cinnamon sticks and bay leaves and cook over high heat for 10 seconds. Lightly season the pork chops with salt and pepper. add 4 chopsto skillet and cook over moderately high heat, stirring a few times, until lightly browned, about 3 minutes. add the water, tamari, sugar and cayenne. Return the pork chops and their juices to the skillet, overlapping the chops if mecessary. Cover and simmer over moderate heat, turning the chops once, until the chops are tender and the sauce is syrupy, about 30 minutes. Discard the cinnamon sticks and bay leaves. Arrange the chops on plates, pour the sauce and vegetables on top and serve with basmati rice.
