Ingredients
- 1/2 cup dry white wine
- 1 onion, sliced
- 1 carrot, sliced
- 1 rib celery, sliced
- 2 tablespoons lemon juice
- 1/2 teaspoon salt
- 1/4 teaspoon pepper
- 3 sprigs fresh thyme
- 4 salmon fillets

Step 1
Combine 2 cups of cold water, wine, onion, carrot, celery, lemon juice, salt, pepper, and thyme in a crock pot. Cook on high for 20 minutes
Carefully lower salmon fillets into liquid. Pour additional warm water, if needed, so that liquid just covers the salmon. Reduce heat to low and cook until salmon is light pink and firm (about 30-40 min). Gently lift out and serve warm or let cool and wrap in plastic to refrigerate.
