Nugget Salmon Scampi

  • 4 oz Sockeye, or Coho Salmon, per person
  • 11/2 oz Scampi butter (butter, garlic, parsley)
  • 1/2 oz minced celery
  • 1/2 oz diced onion
  • 1/2 oz diced tomato
  • 1/2 oz diced mushroom
  • 4 diced marinated artichoke hearts
  • dashes of: worcestershire, tobasco, lemon juice, salt, celery seed, white pepper..
  • splash of white wine
  • Saffron rice


Servings 2
Preparation time 15mins
Cooking time 23mins


Step 1

Cook Rice, set aside
Mix ingredients except salmon and saute'
add salmon and cook till done, (4 min per side?)
Place salmon over rice and top with pan ingredients

serve with Bread and White Wine
