Ingredients
- 2 cups all-purpose flour
- 1/2 teaspoon baking soda
- 1 1/2 sticks (3/4 cup) salted butter, softened
- 1 cup granulated sugar
- 2 large eggs
- 1 1/2 teaspoon orange extract
- 1/4 cup mandarin oranges, drained and chopped
- 9 ounces mini chocolate chips (about 1 1/4 cups)

Step 1
Preheat oven to 325 F.
Step 1: Preheat oven to 325 F.
Step 2: In a medium bowl whisk together flour, and baking soda; set aside.
Step 3: In a large bowl cream butter and sugar with an electric mixer at medium speed to form a grainy paste.
Step 4: Add eggs and orange extract, and beat well, scrape down sides of bowl as needed.
Step 5: Stir in chopped mandarin oranges.
Step 6: Add flour mixture and the chocolate chips, and blend at low speed just until combined. Do not overmix.
Step 7: Drop dough by teaspoons onto ungreased cookie sheets, 1 1/2 inches apart.
Step 8: Bake for 14 - 15 minutes. Do not over bake. Transfer cookies immediately to cooling surface.
