Ingredients
- 2 c. sugar
- 1 tsp salt
- 2 c. flour
- 1 tsp baking soda
- 2 tsp baking powder
- 2 tsp cinnamon
- 2 c. shredded carrots
- 1 c. coconut
- 1 c. chopped nuts
- 2/3 c. oil
- 2 tsp vanilla
- 3 eggs
- 1 c. crushed pineapple, drained (reserve)
- Cream Cheese Icing
- 2 3oz pkg cream cheese
- 1 stick butter
- 2 tbs reserved pineapple juice
- 1 lb powered sugar

Preparation
Step 1
Preheat oven to 350 degrees. Mix dry ingredients. Add carrots, coconut and nuts. In another bowl mix oil, vanilla, eggs and pineapple. Combine the dry and wet ingredients. Put batter in a greased 9x13 inch cake pan. Bake 30 to 40 minutes or until toothpick comes out clean. Allow to cool before icing.
Icing:
Cream the cream cheese and butter together. Add the powdered sugar and juice mixing until smooth.
Place on top of cake and spread. Enjoy!
