Ingredients
- 1/2 cup finely diced white onion
- 1/4 cup lime juice
- 1 1/2 # tomatoes
- 3 seeded and finely chopped jalapeno peppers
- 1 seeded and finely chopped diced Anaheim chili
- 2 tbsp chopped cilantro
- 1 crushed garlic

Preparation
Step 1
Combine onion and lime juice. Let stand for 10 minutes. Torch skins of tomatoes. Let cool and dice. Put in separate bowl; stir in the peppers, cilantro and garlic. Stir in onion mixture. Season with salt, cayenne and black pepper to taste.
