- 2 tablespoon vegetable oil
- 2 1/2 pounds hash browns
- 4 tablespoons minced onion
- 5 eggs
- 1/3 cup vegetable oil
- 2 teaspoons salt
- 1 teaspoon pepper

Preparation
Step 1
Preheat oven to 350
grease 4 1 pound pans with 2 tablespoons oil.
Combine potatoes and onions in a large bowl. In another bowl mix eggs, 1/3 cup oil, salt and pepper. Pour over potatoes and mix well. Pour into each pan to weight 1 pound.
Bake in reheated oven until top is crisp and brown 1 1/2 hours to 2 hours.
