Abby's Sweet Potato Casserole

A perfect healthy Thanksgiving or Christmas dish to replace the traditional sweet potatoes and marshmallows.

Ingredients
- 3 c mashed sweet potatoes (2 cans)*
- 1 c brown sugar (or 3/4 cup plus some to sprinkle on top)
- 2 eggs
- 1 t vanilla
- 1/2 c milk or milk substitute
- 1/2 c butter, Smart Balance margarine or melted coconut oil
- 1/4 tsp nutmeg
- 1/2 tsp cinnamon
- Canned sweet potatoes work great, or make sure you remove at least an inch of the ends of the potatoes to reduce strings.)
- (Edit: if using canned, use the plain sweet potato puree, not the sweetened canned yams.)

Preparation
Step 1
Mix ingredients. Put in ungreased 8x8-ish baking dish. Bake at 350 for 30-40 minutes.
Optional: sprinkle with brown sugar and pecans.
