- 1 bunch red ace beets
- 1 bunch carrots
- olive oil
- balsamic vinegar
- ground ginger to taste
- 1 tsp honey
- salt and pepper

Step 1
Shred beets and carrots and toss in oil, vinegar, honey, and spices. Cover and refrigerate for at least one hour. That's all!
