Penne with Arugula and Prosciutto (Docky's class)

Ingredients
- 1 pound penne
- 1/4 pound thinly sliced prsciutto , chopped
- 1 pound arugula
- 2/3 cup gresh parmesan
- 3/4 ts lemon zest
- 1/4 cup extra virgin olive oil

Preparation
Step 1
Boil pasta. Reserve 1 cup pasta water. Return pasta to the pot after drained, add prscoiutto, arugula, cheese, zest and salt and pepper to taste and toss. Drizzle the oil over the pasta and toss again, adding some of the reserved water. Serve immediatley
