Lemon Almonds

Ingredients

  • 3 cups Unblanched Almonds (raw)
  • 1-1/4 cups Fresh Lemon Juice
  • 1/2 tsp Sea Salt
  • 1 tbsp Turbinado Sugar
  • 1 tbsp Extra Virgin Olive Oil

Preparation

Step 1

Place almonds in a medium sized bowl. Cover with the fresh lemon juice. Soak the nuts for 30 minutes.

Pour the almond mixture into a strainer, shaking it to remove excess lemon juice. Pour onto a parchment lined baking sheet and bake in a 350 degree oven for 15 minutes.

Pour the hot nuts into a large bowl and lightly toss with the olive oil, the sugar and salt. Return the nuts to the baking sheet and bake 10 minutes longer, or until slightly browned.

After removing from the oven, let sit on pan until cool. Try not to stir them until they have cooled completely.

When completely cool, stir and place in an airtight container.
