Ingredients

  • 1 1/2

    cups lightly packed fresh cilantro leaves

  • 1/4

    cup water

  • 2

    Tbsp lime juice

  • 1

    tsp cumin

  • 1/2

    tsp salt

  • 1/4

    tsp pepper

  • 1/4

    tsp hot pepper sauce

  • 1

    (1/2 lb) salmon steaks

  • 1

    yellow bell pepper, cut into strips

  • 1

    red bell pepper, cut into strips

Directions

Combine cilantro, water, lime juice, cumin, salt, black pepper, and pepper sauce in food processor or blender and puree. Transfer to large zip close plastic bag; add samon. squeeze out air and seal bag; turn to coat. Refrigerate about 1 hour. Preheat oven to 400. Spray 9 in square baking dish with nonstick spray. Spread bell peppers in single layer in backing dish. Bake, turning, until almost tender, about 15 min. REmove salmon from marinade; discarde marinade. Place salmon on top of bell peppers. Bake until salmon is just opaque in center, about 5 min per side. Cut salmon steaks in half.
