  • 1 cup raw cranberries, chopped
  • 3/4 cup sugar
  • 2 cups unsifted flour
  • 3/4 teaspoon baking soda
  • 1/4 teaspoon salt
  • 1 egg
  • 1 cup buttermilk
  • 1/4 cup melted butter

Preparation

Step 1

Pre-heat oven to 400. Grease 18 muffin cups. Mix cranberries with 1/2 cup sugar and set aside.
Combine flour, salt, baking soda and 1/4 cup remaining sugar in a large bowl. Combine egg and buttermilk with melted butter. Mix with fork. Pour mixture into center of dry ingredients. Add cranberry and sugar mixture. Pour into muffin cups approx. 3/4 full. Bake for 20 minutes.
