Rice Zucchini Chili Cheese Bake

Ingredients

  • 1 c uncooked rice
  • 3 medium zucchini
  • 2-3 cans diced chilies
  • 12 oz Jack cheese, grated
  • 1 large tomatoe, sliced
  • 2 c sour cream
  • 1 teas organo
  • 1 teas garlic salt
  • 1/4 c chopped green pepper
  • 1/4 c chopped green onion
  • 2 T chopped parsley

Cook rice in 2 cups water. Put into buttered 9X13" dish. Cover with drained chilies. Sprinkle with half of cheese. Arrange zucchini slices over cheese. Add tomatoes slices and sprinkle with salt. Combine sour cream, oregano, salt, green pepper and green onion. Spoon evenly over tomatoe layer. Top with remaining cheese. Bake 40 minutes.
