Pineapple Chicken

Ingredients

  • 1 chicken, cut into pieces.
  • 13 1/2 oz pineapple chunks
  • 1 c sugar
  • 2 T cornstarch
  • 1 T soy sauce
  • 3/4 c vinegar
  • 1/4 teas ginger
  • 1 chicken bouillon cube
  • 1/2 bell peppers, cut into pieces

Brown chicken in skillet. Put into greased casserole dish.

Drain pineapple, saving juice and adding water to measure 1 1/4 cup.
Mix juice, sugar, cornstarch, soy sauce, vinegar, ginger and bouillon cube in pan. Boil 2 minutes.
Pour sauce over chicken and bake 30 minutes. Add pineapple and pepper and bake additional 30 minutes.
