Preparation
Step 1
Rinse leaves and squeeze to bruise them slightly. Place the leaves in a glass or ceramic pitcher. and fill the pitcher with good quality water. Cover the pitcher with a lid or a piece of plastic wrap to keep the bugs out, and put it on a table in the sun. Stir or shake periodically until the teas smells "done." Not very scientific, but it makes a delicious, caffeine-free beverage. Fill gasses with ice cubes and strain the tea as it's being poured into the glasses. Add a sprig of fresh mint or lemon verbena to the glass for decoration.
