Ingredients

  • 1 3/4

    cups sugar

  • 3

    eggs

  • 1

    cup vegetable oil

  • 1 3/4

    cups sifted flour

  • 2

    tsp cinnamon

  • 1 1/2

    tsp baking soda

  • 1 1/2

    tsp baking powder

  • 2 1/2

    cups grated carrots

  • 2/3

    cups chopped nuts

  • 1/3

    cups raisins

Directions

Preheat oven to 350 degrees. Grease and flour Springform Pan; in large mixing bowl, beat sugar and eggs until thickened; add oil and beat well. Sift flour, cinnamon, baking soda and baking powder together; add to egg mixture and mix well. Fold in carrots, nuts and raisins. Pour into prepared pan and bake for 50-60 minutes or til toothpick comes out clean. Cool 10 minutes in pan, remove springform, invert on rack and remove bottom to cool.
