Bourbon and Brown Sugar Flank Steak with Garlic Chive Mashed Potatoes

Ingredients

  • Steak:
  • 1/4 cup dark brown sugar
  • 1/4 cup minced green onions
  • 1/4 cup bourbon
  • 1/4 cup soy sauce
  • 1/4 cup dijon mustard
  • 1/2 tsp black pepper
  • 1/4 tsp Worchestershire sauce
  • 1 2lb flank steak
  • 1/2 tsp cornstarch
  • Potatoes:
  • 3 lbs small red potatoes
  • 6 cloves garlic, peeled
  • 1/2 cup sour cream
  • 1/3 cup milk
  • 2 1/2 tbsp butter
  • 1 tsp salt
  • 1/4 tsp pepper
  • 1/4 cup chopped fresh chives
  • Garnish:
  • 8 chives, cut into 1 inch pieces

Preparation

Step 1

Combine the first 7 ingredients in a large zip top bag and add the steak. Marinate in the refridgerator 8 hrs or overnight, turning occasionally.
Prepare the grill. Remove the steak and reserve the marinade. Grill the steak 5 min on each side or to your desired degree of doneness. Let it stand for about 10 min and then slice thinly across the grain.
Combine the marinade and the cornstarch in a saucepan and boil for 1 min, stirring constantly.
For the potatoes, put the potatoes and garlic in a large pot and cover with water. Bring to a boil and then reduce the heat and simmer for 30 min or until tender. Drain.
Return the potatoes and garlic to the pan and place over medium heat. Add the sour cream, milk, butter, salt, and pepper. Mash to your desired consistency and stir in the chopped chives.
To serve, mound some potatoes on your plates. Arrange some meat slices around the potatoes. Drizzle some sauce around the plates and top with the chive pieces.
