Banana Cream Pie

Ingredients
- Baked 9-inch pie shell
- 1/3 cup flour
- 2/3 cup sugar
- 1/4 teaspoon salt
- 2 cups milk, scalded
- 3 egg, separated
- 3 medium bananas
- 1 teaspoon vanilla
- 2 tablespoons butter

Preparation
Step 1
Combine flour, sugar and salt in saucepan. Slowly blend in scalded milk. Cook, stirring constantly, over medium heat until mixture thickens and boils. Continue stirring 1 minute.
Remove from heat and add a little hot mixture to beaten egg yolks. Quickly stir into mixture in saucepan.
Return to medium heat and cook, stirring constantly for 3 minutes or until it thickens again and mounds slightly.
Remove from heat add butter and vanilla, stirring until butter is melted. Cool.
Slice peeled firm bananas into pie filling and stir gently to cover bananas with filling. Pour into pie shell. Chill until firm. Serve with whipped cream.
