Hasselback Potatoes (Swedish)
- 6 med. baking potatoes
- 1/4 C margarine or butter, melted
- 1/4 C grated parmesan cheese
- 2 T dry bread crumbs
Cut potatoes crosswise into 1/8 inch slices, cutting only 3/4 through. (Place potato in tablespoon while cutting to avoid cutting all the way through.) Place cut side up in greased oblong baking dish, 11 x 7 x 1 1/2 inches. Brush with margarine and sprinkle with salt and pepper.
Bake in 375 oven, brushing with margarine once or twice, 45 minutes. Mix cheese and bread crumbs, sprinkle on potato. Sprinkle with paprika. Bake until tender, 20-30 minutes.
Note: Potato can be baked with a roast at 325 for 1 hour. Brush with meat drippings, sprinkle with cheese mixture. Bake until tender about 30 minutes.
