- 1 small head cauliflower, cut into florets
- 1 onion
- 2-3 cloves garlic
- 1 jalapeno pepper
- chicken broth or vegetable broth
- 1 cup grated parmesan or romano cheese
- salt and pepper
Steam cauliflower until soft.
Add a couple tablespoons of olive oil to a skillet and saute chopped onion, garlic, and jalapeno pepper.
Run cauliflower, onion, garlic, and jalapeno pepper through the blender, adding broth to thin out the mixture until it has the consistency of a pasta sauce.
Pour cauliflower mixture into a mixing bowl, and add parmesan cheese, salt and pepper to taste. Serve over cooked pasta.
