Crisp Chicken with Garlic

Servings: 4 servings



Preheat boriler. In food processor, pulse garlic with cracked & 2 t. kosher salt. Add 1 C cilantro, lime juice, crushed red pepper & 1 T olive oil & pulse til chunky paste forms. Rub paste all over chicken breasts. Transfer to baking sheet & let stand for 10 min. Meanwhile, in med bowl, toss tomatoes with scallions & season with pinch each of sugar & salt. Drizzle with olive oil & toss well. Season chicken with salt. Set in oven rack 5" from heat. Broil 6 min, then turn & broil 6 min. longer. Transfer to serving plates, garnish with cilantro & lime wedges & serve with tomatoes
