Passover Banana Nut Cake

Ingredients
- 8 eggs( room temperature)
- 11/4 cups sugar
- 1/2 tsp salt
- 11/4 cups mashed ripe bananas
- 1/4 cup matza cake meal
- 1/2 potato starch
- 1/4 tsp cinnamon
- 1/2 chopped walnuts

Step 1
Separate eggs into large mixing bowl. Slowly beat 1 cup sugar & salt into yolks till thick & light in color. Add mashed bananas. Beat 3 mins at highest speed till very light. Stir together cake meal, pot starch & cinnamon. Fold gradually into banana mixture. Add nuts. Beat egg whites at hightest speed till stand in peaks ( not dry). continue beating to make merringue by beating 1/4 cup sugarinto whites 1 tbsp at a time. Fold meringue into banana mixture. Turn into 10 inch tube pan(greaded). Bake at 325 for 70 -75 mins or until cake springs back.
