Herbed Couscous with Lemon

  • 3/4 cup water
  • 1/4 teaspoon freshly grated lemon zest
  • 1/4 teaspoon dried thyme
  • 1/2 cup couscous
  • 1/4 cup packed freshly parsley leaves, minced
  • 1 tablespoon olive oil
  • fresh lemon juice to taste

Step 1

1. In a small heavy saucepan bring the water to a boil, stir in the zest, the thyme, and the couscous, and remove the pan from the heat.
2. Let the mixture stand, covered, for 5 minutes, fluff it with a fork, and stir in the parsley, the oil, the lemon juice, and salt and pepper to taste.
3. Serve.
