Lemon Gooey Bars

Ingredients

  • 1 lemon cake mix
  • 1/2 cup butter , melted
  • 1 egg
  • "Filling:"
  • 1 T vanilla extract
  • 2 eggs
  • 8 ounces chream cheese room temp
  • 1/2 C butter melted
  • 3 3/4 C powder sugar
  • If desired add zest of one lemon, or 1/2 tsp dried lemon zest

Bake 350

For crust, mix together the dry cake mix butter and egg. Mixture will be thick. Press into greased 9x13 baking pan / set aside.

For filling, beat cream cheese until smooth. Add vanilla eggs and butter. If using lemon add it now. Mix well and add powder sugar, combine.

Spread filling over crust and back 38-42 min until lightly brown and when gently shaken the center will only slightly jiggle.

Cool and cut into small bars. Can be chilled in fridge for a bit before cutting. Cover and store in fridge.
