Roasted Garlic Mashed Potatoes

  • 1 head garlic (about 15 cloves), cloves separated and peeled
  • olive oil
  • 4-5 large potatoes
  • 2 T butter
  • 1 tsp salt
  • Sour cream or Greek yogurt
  • Green onions
  • Kale or other greens

Step 1

1. Prepare the head garlic (about 15 cloves) by separating and peeling cloves.

2. Preheat oven to 350 (I've used the toaster oven). Place the cloves in a small roasting pan. Drizzle with olive oil and toss to coat. Roast uncovered for 1 hour or until soft and well-browned.

3. Puree in a food processor or blender. Can be made up to a week ahead; cover tightly and refrigerate).

4. Wash, peel, and cut up potatoes. Place in pot and cover with water. Bring to a boil and simmer 15-20 minutes. Test with a fork to see if they are soft.

5. Mash potatoes with butter and salt with potato masher or in food processor.

6. Add the roasted garlic. Using sour cream or greek yogurt instead of milk and adding green onion makes a great dish. You can cook greens, such as kale, and add them as well.
