Rosemary Maple Pork Tenderloin

Ingredients
- l lb. pork tenderloin
- 1 med. Shallot finely chopped
- 1/4 tsp. salt and pepper
- 2 Tbs. oil
- 3 sprigs fresh rosemary
- 1/2 c. wine
- 8 oz. mushrooms, sliced
- 1 1/2 c. beef broth
- 1/2 c. maple syrup

Step 1
Season pork with salt and pepper.
Preheat saute' pan on medium high for 2-3 min. Place oil in pan, then add pork, cook 4-5 min, turning occasionally. Remove pork from pan and keep warm.
Remove pan from heat and add wine. Stir in mushrooms and shallots, cook and stir 2-3 min or until wine has completely evaporated.
Stir in broth, syrup, and whole rosemary sprigs. Return pork to pan, cover and cook 10-12 min, turning pork occasionally, or until pork is 145. Remove pork from pan and let stand 5-10 min before slicing.
Continue to cook sauce 4-5 min more or until thickened.
