Potato Broccoli Soup

Ingredients

  • 1/4 cup butter
  • 1 large onion, minced
  • 2 ribs celery with tops, minced
  • 1/4 cup flour
  • 3 cups water
  • 2 cups peeled, cubed raw potatoes
  • 1 tsp. salt
  • 1 cup minced fresh broccoli
  • 1/2 cup cream
  • Grated parmesan cheese

Preparation

Step 1

Melt butter; add onions and celery. Cover and cook over low heat until tender. Blend in flour, add water, potatoes and salt. Stirring bring mixture to a boil. Reduce heat and simmer until potatoes are tender about 25 minutes.

Add broccoli and simmer about 10 minutes. Add cream and heat thoroughly.
Serve hot garnished with cheese.
