Whipped Maple Sweet Potatoes

  • 3 lb garnet sweet potatoes
  • 2 Tbsp maple-flavored syrup
  • 2 Tbsp butter or margarine, softened
  • 1/2 tsp salt
  • Ground cinnamon
  • Additional maple-flavored syrup, if desired

Preparation

Step 1

1) Heat oven to 350.
2) Pierce sweet potatoes with fork. Place potatoes in 9" square pan.
3) Cover with foil; bake 1 hour 15 minutes or until potatoes can be easily pierced with a knife.
4) Slip off potato skins.
5) In large bowl, beat potatoes with electric mixer on medium speed until no lumps remain.
6) Add 2 Tbsp syrup, the butter, salt & desired amount of cinnamon.
7) Continue beating until potatoes are light & fluffy.
8) Drizzle with additional syrup.
