Turkey Noodle Bake

Ingredients
- 2 cups egg noodles
- 1 tbsp oil
- 1 onion, chopped
- 1/2 pound ground turkey
- 1/4 cup beef broth
- 2 tbsp tomato paste
- 2 tsp garlic
- 2 tbsp green olives
- 1/4 tsp pepper
- 1/2 cup shredded cheddar cheese
- 2 tbsp parsley

Preparation
Step 1
Preheat oven to 425*.
Cook noodles according to pkg directions. DO NOT SALT. Drain in colander and set aside.
While noodles are cooking, heat oil over medium heat. Add onion and sauté until tender, about 3 minutes. Add turkey, cook, stirring until no longer pink. Add broth, tomato paste, garlic,olives and pepper. Cook, stirring until mix thickens, about 3 minutes.
Place noodles in a large bowl. Stir in turkey mix, cheddar cheese and parsley. Toss well. Spoon noodle mix into a casserole dish.
Bake casserole until golden brown. 20 minutes.
