Roasted Bronzed Cauliflower

Ingredients

  • 1 large head cauliflower - cut into florets
  • sea salt and pepper
  • 1 to 2 tablespoons olive oil
  • 4 tablespoons butter
  • 1/3 cup pint nuts or slivered almonds
  • 2 cloves garlic - minced
  • 1/2 to 2/3 cup pitted, moist dates - coarsely chopped

Step 1

Spread cauliflower on lined, sprayed sheet pan. Drizzle with olive oil, salt and pepper; toss. Roast at 425 degrees F. until browned and caramelized along edges, turn once. Place in large bowl. Toast pine nuts in small skillet over medium heat until barely golden brown. Set aside. Melt butter in same skillet with garlic and dates; cook and stir until softened. Add pine nuts and stir around. Pour mixture evenly over cauliflower than toss gently to combine. Add a bit of salt.
