Corn and Okra Soup

Ingredients

  • 2 tbsp. olive oil
  • 2 tbsp. butter
  • 4-6 green onion, with most of green, sliced
  • 2 cloves garlic, minced
  • 2 ribs celery
  • 2-3 c chicken broth (depending on how soupy you want it)
  • 2 can (14.5 oz) diced tomatoes, undrained
  • 8-10 oz okra (3-4 cups) sliced, fresh or frozen, thawed (a bag)
  • 1 can corn kernels (can use frozen)
  • 1 lb. smoked sausage, sliced
  • 2 tsp. Cajun seasoning
  • dash fresh ground black pepper
  • salt, to taste

Preparation

Step 1

In medium saucepan, heat olive oil and butter over medium-low heat. Brown smoked sausage. Add onion, garlic, and celery; saute', stirring until celery is tender. Add chicken broth, tomatoes, sliced okra, corn kernels, cajun seasoning, and pepper. Bring to a boil. Reduce heat to medium-low, cover and simmer for 20 to 30 minutes, or until okra is tender. Add salt to taste.
