Loaded Baked Potato Soup

Ingredients
- 4 (6oz) red potatoes
- 2 tsp olive oil
- 1/2 cup pre chopped onion
- 1 1/4 cups fat free, lower sodium chicken broth
- 2 cups 1% low fat milk, divided
- 3 TBSP all purpose flour
- 1/2 tsp salt
- 1/4 tsp pepper
- 3 turkey bacon slices
- 4 tsp sliced green onions
- 1/4 cup reduced fat sour cream

Step 1
1. Pierce potatoes w/fork. Microwaver on high for 13 minutes or until tender. Cut in half.
2. While potatoes cook, heat oil. Add onion. Saute 3 minutes. Add broth. Combine flour & 1/2 cup milk. Add to pan 2 1 1/2 cups milk. Bring to boil. Stir often. Cook 1 minute. Remove from heat. Stir in sour cream, salt & pepper.
3. Arrange bacon on paper towel. Microwave for 4 minutes.
4. Discard potatoe skin. Mash potatoes into soup. Top w/ cheese, onion and bacon.
Calories; 325- 1/1/4 cup serving- 4 servings
