Ingredients
- 1 1/3 cups cornmeal
- 1 3/4 cups flour
- 2 tbsp. sugar
- 1 1/2 tsp. baking powder
- 1/2 tsp. soda
- 1 1/4 tsp. salt
- 1 3/4 cup buttermilk
- 1 egg plus 1 yolk
- 4 tbsp. unsalted butter, cut into 4 pieces

Step 1
Preheat oven to 425. Combine cornmeal, flour, sugar, baking powder, soda, and salt. Whisk buttermilk, egg and egg yolk together. Combine the two mixtures. Add butter to skillet (at least 10" wide) and put into oven for 3-5 minutes to melt. Pour batter into skillet and smooth with rubber spatula. Bake 20-25 minutes until inserted toothpi9ck comes out clean.
