Orange Brunch Pancakes

  • 1 cup packaged biscuit mix
  • 1 cup quick-cooking rolled oats
  • 1 Tbsp granulated sugar
  • 1 Tbsp brown sugar
  • 1 1/2 tsp finely shredded orange peel
  • 2 eggs
  • 1 cup milk
  • 2 Tbsp orange juice
  • 1/2 tsp vanilla
  • Orange Honey Syrup
  • 1 cup granulated sugar
  • 1/2 cup water
  • 1 1/2 tsp finely shredded orange peel
  • 2 Tbsp orange juice
  • 1/2 cup honey
  • 2 Tbsp butter or margarine


Servings 12


Step 1

Stir together biscuit mix, oats, sugars, and orange peel. Beat together eggs, milk, orange juice, and vanilla with rotary beater. Add egg mixture to flour mixture; stir till blended Let stand 5 minutes.

For each pancake, pour about 1/4 cup batter onto hot, lightly greased griddle. Cook over medium-low heat about 3 minutes or till golden brown, turning once. Pass hot Orange-Honey Syrup. Garnish with halve orange slices, if desired.

Orange-Honey Syrup: In small saucepan, combine sugar, water, orange peel, and orange juice. Bring to boil, stirring constantly. Reduce heat; simmer, uncovered, 10 minutes. Stir in honey and butter, or margarine; bringing to boiling. Remove from heat.
