Ingredients

  • 1 boneless skinless turkey breast half (2-1/2 pounds)
  • 1 small onion finely chopped
  • 1 clove garlic finely chopped
  • 1 bunch chopped spinach
  • 1/2 cup shredded Parmasean cheese
  • 1/3 cup crasions
  • 1/3 cup finely chopped apricots
  • 1-2 tablespoons EVOO
  • 1/4 teaspoon each salt and pepper
  • 1/4 teaspoon dried rosemary, crushed
  • 1/4 tsp paprika
  • 1 tsp chopped flat leaf parsley

Preparation

Step 1

Preheat oven to 325 degrees

Place the turkey breast between two sheets of plastic wrap. Pound breast until apx.1/2 inch thickness evenly throughout.

Heat EVOO in medium size saute pan. Cook onion until soft and clear (apx 2 minutes). Add garlic and cook for one minute. Add spinach and cook until lightly wilted.

Remove from heat and wisk in Parmasean cheese, crasions and apricots.

Sprinkle prepared turkey breast with salt and pepper and crushed rosemary.
Spread spinach mixture evenly over turkey breast leaving apx 1 inch clear along the edges.

Gently roll the turkey breast jelly roll style. Secure the rolled turkey breast with butchers twine and place it on an oiled jelly roll pan.

Lightly brush the top of the turkey with EVOO and sprinkle with the paprika and chopped parsley. Roast in the oven until a meat thermometer reads 170°. Let stand for 10 minutes before slicing.
