- 2 tablespoons olive oil
- 2 garlic cloves
- 2 tablespoons rosemary leaves
- 6 chicken marylands
- 2 lemons, cut into quarters

Preparation
Step 1
Preheat oven to 200°C. Place oil, garlic and rosemary in a mortar and pestle. Pound until well combined (alternatively, process in a small food processor). Season with salt and pepper.
Arrange chicken, skin side up, in a large roasting pan. Spoon over oil mixture. Using clean hands, rub oil mixture over chicken. Place lemon wedges around and under chicken. Roast for 1 hour or until chicken is golden and cooked though. Serve with baked lemon wedges.
