Ingredients

  • 1 large avocado
  • 2 plum stomatoes
  • 1/2 C chopped purple onion
  • 1 clove garlice, minced
  • 1 Tbsp chopped fresh parsley
  • 1/2 Tsp chopped fresh oregano
  • 1 Tbsp olive oil
  • 1/2 Tbsp red wine vinegar
  • 4 Oz package of fets cheese, crumbled

Step 1

Peel and seed avocado. Chop avocado and tomatoes; place in a large bowl. Add onion and remaining ingredients EXCEPT cheese, toss to coat. Fold in cheese. Serve immediately. Yield: 2 cups
