Black Bean Chili

Ingredients
- 1 teaspoon olive oil
- 2 cloves garlic, finely chopped
- 2 cans (14 1/2 ounces each) black beans (low sodium) drained and rinsed
- 2 cans (14 1/2 ounces each) diced tomatoes with chilies, drained
- 1 cup corn
- 1 teaspoon cumin
- 1 bunch scallions, finely chopped
- 1 tablespoon chili powder
- 1 teaspoon unsweetened cocoa powder
- 1/4 teaspoon black pepper
- 1 container fat-free plain greek yogurt
- 1 bunch cilantro, minced (optional)

Preparation
Step 1
Chop garlic cloves and let sit for 5 minutes to bring out it’s health-promoting benefit. In a 6-quart pot, sauté garlic in olive oil over medium heat for about 5 minutes stirring frequently. Add the beans, tomatoes, corn, scallions, chili powder, cumin, cocoa powder, salt & pepper. Bring to boil. Simmer on low for 30 minutes. Garnish each serving with greek yogurt and cilantro.
