Ingredients
- For the bruschetta:
- 4 vine tomatoes, chopped
- 1 large orange bell pepper, chopped
- 3 large garlic cloves, minced
- 10 small basil leaves, chopped
- salt and pepper, to taste (omit salt for healthier version)
- 3 - 4 tbsp. balsamic vinegar
- For the garlic bread:
- 8 slices 100% whole grain bread (or 100% rye bread)
- 2 whole cloves garlic

Preparation
Step 1
1. Preheat oven to 400 degrees. Place bread on baking tray and set aside.
2. Combine all ingredients for brushetta and mix until combined. Allow this to sit for about 10 - 15 minutes for flavours to come together.
3. Place bread in oven on middle rack for about 10 minutes, or until outer edges are just slightly crispy. Remove from oven and rub garlic clove all over bread. Top with bruschetta and serve.
