Ingredients

  • 3 Large sweet potatoes (cubed small)
  • 5 Cloves of garlic (minced)
  • 1 Large yellow onion (diced)
  • 3 Jalapeno chili's (diced)
  • 2 Habanero chili's (diced)
  • 1 Red pepper (diced)
  • 1 Yellow pepper (diced)
  • 1 Green pepper (diced)
  • 1 Bunch basil (chiffonade)
  • 1 Bunch green onion (diced)
  • Kosher salt
  • Fresh cracked black pepper
  • Olive oil

Preparation

Step 1

1. Peel 3 sweet potatoes, cube and put in water. Bring to boil, salt the water, reduce to simmer until fork tender.

2. Cut all other veggies accordingly.

3. Drain potatoes and place on paper towels and cover with paper towels to dry. You want them to be as dry as possible.

4. Saute onion on medium heat for 3-5 minutes until they start to become translucent.

5. Put all chili's, pepper's, and garlic with the onions and continue to cook for 7-10 minutes. Salt. Do not brown.

6. Reduce heat to low. Add dried potatoes to the pan with the other veggies

7. Take off heat. Add green onions. Add basil.

8. Season to taste. Pepper/salt

9. Enjoy.
