Cauliflower Casserole

Ingredients
- 1 head cauliflower
- 1/2 cup onions, chopped
- 1/4 cup grated sharp cheddar cheese
- 1 can cream of mushroom soup (low-Fat)
- 1/2 cup milk
- 6 saltine crackers
- 2 tablespoons butter, melted

Preparation
Step 1
Steam or boil cauliflower and 1/4 cup onions until tender.
Drain and place in a 13 x 9 casserole dish.
Mix grated cheese with remaining onion.
Add soup mixed with milk.
Pour this mixture over cauliflower.
Roll crackers and mix with melted butter.
Sprinkle on top of a casserole.
Bake at 350 degrees for 25 to 30 minutes.
[1 hour - 15 mins prep time, 45 mins cook time]
